Keto Friendly Chocolate Chip Cookies

Here is a chocolate chip cookie recipe I altered to make Keto friendly. They came out great. It cut the carbs down from 20 grams per cookie to just 6 grams per cookie! Now that is a win! 

Keto Friendly Chocolate Chip Cookies

~ Ingredients

2 1/4 Cups Blanched Almond Flour

1 Teaspoon Baking Soda

1 Teaspoon Salt

1 Cup (2 Sticks) Butter, Softened

3/4 Cups Splenda

1/4 + 2 Tablespoons Splenda Brown Sugar

1 Teaspoon Vanilla Extract

2 Large Eggs

1 Cup Nestle Toll House Semi-Sweet Chocolate Morsels

1/2 Cup Walnuts

~ Directions

Step 1

Preheat oven to 375° F.

Step 2
Combine almond flour, baking soda and salt in small bowl. Beat butter, granulated sugar, Splenda brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. I did the nutrition facts based on 1/2 cup of walnuts but I do think next time I will add a whole cup. Drop in tablespoon sizes balls of batter onto ungreased baking sheets.

Step 3
Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

The Best Keto Cheesy Garlic Biscuits!

 These busciuts are one of my favorte Keto recipes! So yuuummmmyyy!


2 Large Eggs

1/2 Cup Sour Cream

1/2 Teaspoon Salt

2 Cups Blanched Almond Flour

4 Teaspoons Baking Powder

8 ounces cheddar cheese

1/2 Tablespoon Minced Garlic

Makes: 18 Biscuits

1. Preheat oven to 350 degrees F. Spray a baking sheet with non stick spray or use parchment paper. 

2. In a medium bowl, whisk together the eggs, sour cream & salt. Using a rubber staptula, mix in the almond flour, the cheesem garlic & the baking powder. 

3. Using a 2 tablespoon scoop, place 18 mounds of the dough on the prepared baking pan. Do not flatten the mounds. 

4. Bake until golden, 15-18 minutes. Serve warm.

Chaffle French Toast

Chaffle French Toast ~ 




I finally decided to try making french toast using chaffles and it was amazing! 

First you will want to make 8 chaffles. Follow the below link to make your Chaffles:

Basic Chaffle Recipe

Next make your french toast batter. 

Chaffle French Toast Batter ~  

Ingredients ~ 

2 Eggs

2 Tablespoons Heavy Cream

1 Tablespoon Splenda

Cinnamon

Instructions ~ 

Combine cinnamon & sugar. Put the amount of cinnamon in the sugar for your own taste. Set aside. Whip together, with a fork, the eggs & heavy cream in a bowl.  It doesn't look like a lot of batter but the chaffles do not soak up as much batter as bread would so your batter goes much farther. 

Dip a chaffle in the batter. Make sure to cover both sides well. Place in a hot skillet/frying pan. Sprinkle your cinnamon and sugar mixture over the chaffle. Once the down side is golden brown, flip the chaffle and sprinkle the otherside with cinnamon and sugar. Cook second side to golden brown. 


Plate and add butter and maple syrup or sugar free syrup. What ever you prefer. I prefer to have the real thing and use just a 1/4 tsp of maple syrup per chaffle. Maple syrup spreads well because it is thin and runny so you really don't need much. 


Waffle Iron Tip - One thing I have changed with making my chaffles is I purchased a large waffle iron that has 4 sections. I make a lot more this way. I tried one of those single serve waffle irons and didn't like it and the one I already had is round and makes them a wonky size. Having 4 sections to make 4 individual waffles works so much better!

Low Carb Lasagna Casserole

I came up with this delicious version of Lasagna for us on Easter. I loved it! Yes, my kids missed the pasta BUT they did like it. So everyone did enjoy it. 

Low Carb Lasagna Casserole

Ingredients ~ 

2 Pounds 85% Lean Ground Beef

1 24oz Jar Of Marinara Sauce*

10 Oz (2.5 cups) Cheddar Cheese

10 Oz (2.5 cups) Whole Milk Mozzarella 

3/4  Cup Parmesean Cheese

1 16oz Bag Frozen Cauliflower

*Choose a marinara sauce that is 7 grams of carbs or less per serving. I chose a sauce that was 7 grams per 1/2 cups serving. 

Directions ~

Preheat oven to 350 degrees. Brown beef in a skillet. While beef cooks, cook cauliflower as directed until the cauliflower is just fork tender. 



Once beef is brown add your marinara sauce, bring to a boil and let simmer 5 minutes. 

Marinara I used.

In a 9x13 pan add the beef marinara mixture. Stir in 8 ounces of cheddar cheese and 8 oz of mozzarella into the marinara sauce. 


Then add 1/2 cup parmesean cheese making sure everything is mixed well. Once the cauliflower is cooked, drain well and pat dry with a paper towel, otherwise your lasagna will be watery. Add the cauliflower to the casserole dish and stir well. 

Top the casserole with the remaining cheese. 


Cover with aluminum foil and bake at 350 degrees for 20 minutes or until casserole is bubbling. Once done, remove the aluminum foil and bake another 5 minutes. 



Makes 11 - 1 cup servings

Chicken Enchilada Casserole Keto Style!

 I have been having a major craving for enchilada's so I came up with this enchilada casserole that the whole family loved! I'm sorry that their isn't pictures of the casserole after it baked. Being a mom I get very focused on getting dinner on the table and I forget to take enough pictures for the blog. LOL!

Chicken Enchilada Casserole Keto Style ~ 

Ingredients ~ 

2.5 Pounds Of Cooked Chicken Thigh Meat

1 8oz Container of Cream Cheese

12 Oz Cheddar Cheese

10 Ounce Can Enchilada Sauce

4.5 Ounce Can Green Chilis

1 Pound Bag Frozen Cauliflower

Sour Cream (optional)

Salsa (optional)

Instructions ~ 

Preheat your oven to 375 degrees. Before getting your casserole ingredients ready, cook your frozen cauliflower as directed on the package. If you haven't cooked your chicken thighs, you will want to cook them now and wait to cook your cauliflower once the chicken is done. The caulaflower can be cooking while you are shredding your chicken. I cook my chicken in the slow cook all day in the crock pot. I just add a little salt and pepper. You can also add taco seasoning if you wish. I find this is the easiest way to cook the chicken so I don't have to cook it when I get home. It also comes off the bone super easy when slow cooked. 

Once cooked shred your chicken and place it in a casserole dish. Cut your cream cheese into cubes so it will melt better. Add your cream cheese into the hot chicken. Mix well. Then add 8 ounces of your cheddar cheese to the chicken mixture. Once stirred in well, add your green chilis and enchilada sauce to the mix. Last add the cooked cauliflower. Mix the ingredients of the casserole well. Take the remaining 4 ounces of cheese and sprinkle on top of the casserole. Bake in a 375 degree oven for 15 minutes. Serve and garnish with sour cream & salsa.

Simple & Delicious Brown Gravy

 I recently did some modifications to my brown gravy recipe and it was a hit! 


Classic Brown Gravy Recipe

Ingredients ~ 

1 1/3 Cup Beef Broth

2/3 Cup Chicken Broth

2 Tsp Worcestershire Sauce

1 Tsp Onion Powder

1/2 Tsp Garlic Powder

1/2 Tsp Salt

1/2 Tsp Black Pepper

4 Tbsp Butter

2 Tbsp Flour

Instructions ~ 

Add butter and flour to a skillet and stir together using a whisk to
make a rough. Once the flour and butter is combined slowly add the beef broth and mix constantly with a whisk. Next mix in the chicken broth the same way. Once thickened add your seasonings and Worcestershire sauce. Stir well. The gravy should be nice and thick. Enjoy! 

Homemade Caesar Salad Dressing

 I never really tried Caesar Salad before, believe it or not! I went to Cheesecake Factory the other day and instead of the house salad they served me a Caesar Salad by mistake! Well it was a delicious mistake. Their Caesar Dressing was amazing!! I ended up loving it! So I was determined to find a similar recipe because the one thing I do know, bottled dressing in the grocery store really doesn't cut it most of the time. We make most of our dressings and sauces at home now and I find we enjoy them a whole lot more. 

This jar is so empty because I didn't get a chance to post this recipe right away and my kids have been gobbling up this dressing. LOL


Homemade Caesar Salad Dressing

Ingredients ~ 

1 Cup Mayonnaise

3 Garlic Cloves Chopped Or Pressed

2 Tbsp Lemon Juice

1 Tsp Dijon Mustard

1 tsp Worcestershire Sauce

1/2 Cup Parmigiano Reggiano Cheese, Grated

1/4 Tsp Salt

1/2 Tsp Black Pepper

Instructions ~ 

In a medium bowl, whisk together the lemon juice, Dijon mustard, Worcestershire sauce, garlic, parmesan cheese and black pepper until blended. 

Add the mayonnaise and whisk until smooth. Refrigerate until ready to serve. Most common Caesar Salads Dressing is served on romaine lettuce but this dressing would be good on any greens! 


Egg Salad Perfect For The Keto Diet!

 This is a quick and simple egg salad recipe that is perfect for Keto! No carbs, which is always a good thing! 

Ingredients ~ 

12 Jumbo Eggs

1 1/2 Tbsp Yellow Mustard

3 Tbsp Mayonnaise 

4 Tbsp Apple Cider Vinegar

Paprika, Salt & Pepper

Instructions ~ 

Boil 12 eggs. When done, cool, peel and chop. Place chopped eggs in a large bowl. Add yellow mustard, mayonnaise & vinegar. You can use less vinegar, I just like my egg salad to have a nice tangy flavor. Mix well. Sprinkle the salad with paprika, salt & pepper to taste. Mix well again. You're done! Enjoy!

My Favorite Keto Friendly Yogurt!

 So I really wanted to be able to eat yogurt regularly but many yogurts on the supermarket shelves are loaded with carbs! But after having some stomach issues last month I really needed the yogurt for the natural live bacteria that yogurt has in it. 

After reading LOTS of nutrition labels I decided to try Fage Plain Greek Yogurt. It only has 5 grams of carbs in a 3/4 cup serving! I have really grown to love this yogurt! I started out enjoying it with one Splenda packet and a little vanilla. But I have also discovered it makes a really great dessert if you mix some Sugar Free Jello in with it! 

It's definitely an item I keep stocked in my fridge. My kids love putting it in their smoothies! So if you are looking for a great tasting yogurt that is Keto friendly, be sure to try Fage 5% Milk Fat Plain Greek Yogurt!

Keto Mackerel Cakes

My mom made what we called "Salmon Cakes" (called it that for years) for us all the time. I DO NOT like fish unless it's frozen fish sticks or these "Salmon Cakes". LOL! My mom never used salmon. She always used Mackerel so I have changed the name since making them myself. 

If you prefer salmon, you can easily use that instead of mackerel. But mackerel is a great fish to add to your diet. Be sure to check out this article on mackerel and it's benefits!

Keep in mind Atlantic mackerel is lowest in mercury levels but you will want to avoid spanish and king mackerel as there mercury levels are high. 

Normally our original recipe took a whole sleeve of saltine crackers. It took some trial and error but I found a 1/2 an once of crushed pork rinds worked perfect. That's about 1/4 cup. 

Keto Mackerel Cakes ~



Ingredients ~

1 15oz Can Mackerel

1/2 Ounce Crushed Pork Rinds

1 Large Onion Chopped

1/4 Tsp Pepper

1/2 Tsp Seasoned Salt

2 Eggs

Directions ~ 

Mix all ingredients well. Form into 1/3 cup patties. Place patties in a dry hot skillet. I sprinkle with more seasoned salt once they are in the pan for extra flavor. Fry at medium heat. Brown on both sides. Once brown  bring temperature to medium to low. Simmer for 15 minutes covered. 




I haven't been able to find mackerel locally for awhile now so I ordered a case on Amazon.

A simple way to crush pork rinds is right in the bag. I poked a couple of wholes in the bag and took a mug to crush them. Then I placed the crush pork rinds in a Ziploc bag.

Chop Steak With Gravy & Onions

Here is a great Keto friendly chopped steak recipe I made for my family tonight! It has only 3.5 carbs per serving! 


Keto Friendly Chop Steak With Gravy & Onions

Ingredients ~ 

2 Pounds 85% Lean Ground Beef

2 Eggs

2 Cups Beef Stock

4 Tablespoons Butter

2 Tablespoons Flour

Salt

Pepper

1 Large Onion

2 to 4 Tablespoons Of Butter

Directions ~ 

1) Combine beef and egg and mix well. Easiest to do it with your hands. 


2) Take ground beef and form into 4 8oz patties or you can do 8 4oz patties. Season side facing up with salt and pepper. 

3) Place the seasoned side of the patties face down in a hot frying pan. Now season the other side of the patties with salt and pepper. Cook on medium to high heat to brown for about 5 minutes. Flip patties and cook an additional 10 minutes on medium to low heat. Once cooked, place patties in oven to stay warm. 


5) While the patties are cooking, slice up onion. Melt 2 to 4 tablespoons of butter in another frying pan. Add the onion and sauté until onions are soft and translucent. 


4) Add 4 tablespoons of butter to the frying pan with all the drippings from the beef patties. Melt butter. Once melted add flour and whisk until completely combined. Next add beef stock a little at a time and continue to whisk. Once you have added all the stock, season with salt and pepper and continue to stir until the gravy is nice and thick. 

Stock, flour and butter for gravy.



5) Place beef patties on a plate and add gravy and sautéed onions on top. Enjoy! 


Makes 4 - 8oz Chop Steak Servings

Keto Chewy Chocolate Walnut Cookies

We have altered most of the cookie recipes we found online. This one we accidently used almond flour instead of almond butter. I think it would have come out a lot better with almond butter, so we will be making this recipe again. My feeling is they will come out a lot less crumbly with almond butter. You can make it with almond flour, but almond butter would be best. 

Keto Chewy Chocolate Walnut Cookies

Ingredients ~ 

1 1/2 Cups Almond Butter
2 Eggs
4 Tablespoons Butter, Softened
1/2 Cup Splenda
1/3 Cup Unsweetened Cocoa Powder
1 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
1/2 Cup Chopped Walnuts
28 Grams Semi Sweet Chocolate Chips

Instructions ~ 

1) Preheat oven to 350F. Line a baking sheet with parchment paper.

2) Combine almond butter, eggs, butter, sweetener, cocoa powder, vanilla extract, salt, walnuts and semi sweet chocolate chips in the bowl of a food processor; pulse until a dough forms. 


3) Roll dough into 25 tablespoon size balls. Place on the prepared baking sheet and press down twice with a fork in a criss cross pattern.

Cookies pictured were made with almond flour, not almond butter. You can use either or, but I believe almond butter will give you a softer, less crumbly texture.

4) Bake in the preheated oven until edges are firm, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

Makes 25 cookies.
