Keto Bread Rolls

 These Keto Bread Rolls were delicious and a nice option during our Thanksgiving meal!


Ingredients

  • 2 cups shredded mozzarella cheese
  • 1/4 cup cream cheese softened
  • 1 1/2 cups almond flour
  • 3 large eggs 
  • 1 teaspoon baking powder (optional)

Instructions

  • Preheat the oven to 350F. Line a large baking tray with parchment paper and set aside.
  • In a large, microwave safe bowl, add your shredded cheese and cream cheese. Microwave for 30 seconds, or until the cheeses have mostly melted. Remove from the microwave and mix together, until smooth. Let the cheese cool for several minutes.
  • When the cheese has cooled slightly, add in the almond flour and two of the eggs, and mix well, until a smooth dough remains.
  • Using your hands, form 10 balls of dough. Place them on the lined tray. Whisk the remaining egg and using a pastry brush, brush the top of each of the rolls.
  • Bake the rolls for 25 minutes, or until golden on the outside. Serve warm.

Notes

~ Low moisture mozzarella cheese is best, as it has minimal flavor. But you can use cheddar for great cheddar rolls!
Leftover rolls can be stored in the refrigerator, covered, for up to 1 week. Freeze them in a ziploc bag for up to 6 months. Thaw completely before reheating. 
You must reheat the rolls, as they are too dense at room temperature/cooled. Either microwave for 30 seconds or place them in a preheated oven until warm.

Gained A Couple Of Pounds The Last Few Days...Why?

 I have done well since Thanksgiving. I ate less then 1800 calories and had below 50 grams of carbs like I had planned for that day. So all in all Thanksgiving went well. But my weight has continued to go up each morning since then. It was up to over 212 Friday and Saturday then went up to over 213 this morning. Hhhmmmm...

I got right back on track right after Thanksgiving and have kept my calories  where they should be and my carbs below 20 grams per day, aside from yesterday where I was at 25g, but that usually does not effect me. 

I didn't record any of my weigh in's over the last few days because I know this is a temporary spike in my weight. It will have to come back down again at some point because I am doing nothing differently. I just wanted to make note of it here so I can refer back to this information in the future. 

I am pretty sure it has to do with my period. I don't always have a gain during my period but I do sometimes. I have not started yet, but I do hope this is the key to the weight gain. I will continue to monitor my weight everyday and see if my period getting ready to start is indeed the culprit! We shall see! 

Not a whole lot I can control with this. The only thing I can do is continue on the course and stick with my diet. I can't let this gain play with my head and I certainly do not intend to let it do so. All I can say is.....



....and continue to soldier on and do what is right for my health! 


Update 11/29/21 - Weighed in this morning at exactly 211 pounds. Started my period yesterday afternoon so I now know that was definitely the cause! Hoping to be in the single digits by Friday morning!

 Ok, so I'm down another pound this morning! This does not get old! I have also hit my 60 pound mark! I've lost 35 pounds pre-Keto and 25 pounds on Keto! I'll take it! Really hoping I can get to onederland by New Years!!

Amazing Keto Mac & Cheese

 I made this delicious quick and easy mac and cheese to replace buying boxed mac and cheese for my kids. Instead of noodles I used cauliflower and let me tell you, it was amazing! 


Amazing Keto Mac & Cheese

~ Ingredients

8oz Seriously Sharp Cheddar Cheese

4oz Sharp Cheddar Cheese

2 TBSP Sour Cream

2 TBSP Butter

2 OZ Cream Cheese

1/2 Cup Heavy Cream

2 Garlic Cloves

1/2 to 1/4 TSP Ground Mustard ( I like more the kids like less. So you choose) 

Salt & Pepper To Taste

One Cauliflower Head

Directions ~ 

1) In a large pot, cook cauliflower until nice and tender. Drain and set aside.

2) In a sauce pan, combine cheese, sour cream, butter, cream cheese, garlic, mustard and heavy cream and let melt on low to medium heat. 

3) Continue stirring until completely melted and serve immediately. 

4) Place cauliflower in a bowl and add sauce! Enjoy! 

Notes ~ 

I served a 1/4 cups of sauce over 6 oz of cauliflower (about half of a head of cauliflower) and that was 10.5 carbs for that serving. 

I did cook noodles for my kids. 



End Of Week 12 - Down 3.6 Pounds This Week!

 Hopped on the scale this morning to get my final weigh in for this past week. I have lost a total of 3.6 pounds this week! A great way to end my 12 weeks on Keto! I will be anxious to see how I do this week with Thanksgiving. I do believe we have a good plan and can enjoy without messing with our lifestyle change that we are so committed to!

Honestly, I doubt we will be able to over indulge. I know I get full quickly. LOL! So everything will be enjoyed in small portions. 



The Thanksgiving Menu

We are so looking forward to all that Thanksgiving brings! Especially spending time as a family preparing our meal and giving thanks for what's most important, our family! My husband and I have looked into different recipes over the last couple of months and I think we have come up with a great Thanksgiving menu! Yes, we have a few desserts, but this will give us variety and dessert we can enjoy over the entire weekend in small portions. Plus, my kids I believe will really enjoy our Keto friendly cheesecakes we have planned. I will post recipes as we create these dishes and tweak them to our liking.

Got Our Side Of Beef Last Week!

 We live in Vermont, so we are fortunate enough to have lots of good food raised around us! We decided to get a side of beef from a local farmer just up the road from us. Totally grass fed and the best part, we know where it comes from!

We enjoyed a few steaks already. So gooood!







Down Yet Another Pound! Woohoo!

 Hopped on the scale to be down another pound this morning. I love how the weight seems to be just melting off!! At this rate, I could be in wonderland by the new year! Wouldn't that be awesome?!!

100% Worth It!!

 I have been more willing to get on the scale lately because I am not afraid of the scale like I used to be. My fluctuations would frustrate me so much! But with this diet I have not dealt with the ridiculous fluctuations I used to deal with. I go up by reasonable amounts that usually drop back down fairly quickly. 

I decided to just check in this morning and I was down yet another pound!! I love it!


I have never in my life said that I love a diet and I can honestly say that about Keto!! I love this diet, this lifestyle change. It has been so easy for me and I know this is a way that I can eat for a lifetime. For those of you still on the fence about trying it, let me tell you it is 100% worth it! 

Granted, it's not for everyone, but it does work for many. I am definitely a meat eater so it suits me very well. I never feel deprived, I eat foods I love and enjoy and I lose weight in the process! What more can I ask for!  I am so thankful that I found this diet and took a chance and tried it!

End Of Weeks 10 & 11 - Making Good Progress!

 It's been a busy couple of weeks. I was not able to weigh in at the end of week 10 but as of Wednesday that week I was down a total of 3.2 pounds for the week! My weight was 217.4. Then I attended a scrapbook retreat that I put on twice a year. So I was not able to weigh in at the end of the week. 

The end of week 11 I was able to weigh in this morning as I was out of town, yet again, yesterday morning! I am down another pound! I am now down to 216.4 pounds! Woohoo! 




Keto Beef & Mushroom Chili

I had an amazing chili for dinner tonight! Substituted beans with onions and mushrooms. This is a quick and easy chili! I use the McCormick Original Chili seasoning pack. The original seasoning pack has 5 carbs per serving. You could easily substitute your own seasoning if you like. I use the packet for a quick and easy weeknight chili to make for the family. 

The recipe makes a double batch. Just cut it in half if you don't want the larger 12 cup serving size. 


Ingredients ~ 

    2 Packets McCormick Original Chili Seasoning

    3 Pounds Ground Beef

    24 Ounces Button Mushrooms Diced 

    1 Medium Onion Diced 

    2 Tablespoons Butter

    2 14.5 Ounce Cans Of Diced Tomatoes

    1/2 Cup Water

Optional Ingredients

    Sour Cream

    Cheese


Directions ~ 

In a large pot brown the ground beef. Melt butter separately in a frying pan. Sautee mushrooms and onions in the butter until mushrooms are soft and onions are translucent. Once the mushrooms and onions are cooked well, add to the browned beef  in the pot. Next, add seasoning, tomatoes and water to the beef. Bring to a boil then let simmer for 10 minutes covered. Garnish with sour cream and cheese if desired. 

Makes 12 1 cup servings.

Wow! Down Another .8 pounds!

 So I was curious this morning and wanted to make sure my weight loss from yesterday was going to stick. Well to my surprise I was down another .8 pounds!! What a week! This is awesome!

Wow! Down Another 2.4 Pounds Since Saturday!!

 Wow! I can't believe I just dropped another 2.4 pounds this morning since Saturday! Probably because I'm at the tail end of my period, but I'm still super stoked! This lifestyle has been so easy!! I love seeing the pounds melt away! And it's the week of Halloween no less! I hate to keep repeating myself, but I have NEVER lost weight during the week of Halloween! 

October tends to be a month I definitely gain weight. Between my Anniversary, Birthday & Halloween, it has always been a bad combination for me! All I can say is WOW! So excited to see my progress continue to go in the right direction! I will be out of the 200's before I know it!

Happy Halloweeeeen! Had Candy For The First Time In 9 Weeks!

Happy Halloween! 


I had a very busy Halloween as we passed out candy to kids at my shop. I had candy for the first time in 9 weeks! I enjoyed one of my favorites....Milk Duds. Had 54 carbs on Halloween and was proud to say it did not kick me out of ketosis! My numbers looked great yesterday!


I have gotten right back on track and did fine with my carbs. I didn't find eating the Milk Duds caused me to crave more candy on Halloween or yesterday so I was happy about that. Did well yesterday and went right back to my normal routine! 

This was a very successful experiment on how I would react to eating sweets! I can do it in moderation and not crave more and more. But it will be a treat that is far and few between! Mainly on holidays if I can help it. I don't want this becoming a regular thing or a habit. 

Next holiday to tackle is Thanksgiving! I am looking forward to coming up with a menu that is friendly for our Keto Diet and a sweet treat that is reasonable for all of us!
