Had a really good day yesterday. Dropped down another .8 pounds this morning! I will take it! Now I just need to lose 2.3 pounds to get back into the 190's! I am feeling good about my changes! It's been a little easier this time so hopefully that is a good sign that my mindset is where it needs to be.
I am getting back acquainted with some of my favorite Keto recipes! I've had some ice cream I made awhile ago and I've been digging those out and they have held up well! I now know I can make them way ahead and freezer burn is not a huge issue. I think they have been in the freezer for over 6 months! We pretty much ate most of what is in there so I will be making more soon!
I also had a favorite of one of my dishes. Chaffles & eggs this morning! They were so good I may have them for lunch, too! I forgot how good chaffles are! I think I need to just get back to my old Keto habits to remind myself I love a lot of what I make on Keto! I just need to get away from those carbs which I clearly think is putting me in a brain fog as all I do is crave the carbs once I start too much into them!
Here are my morning chaffle & eggs! I add a tsp of maple syrup on my 2 eggs & chaffles and it's just enough to give me that nice little sweet flavor without going crazy on the carbs! I do recommend using real maple syrup, not because I live in VT LOL, as it is thinner than the fake stuff and spreads a whole lot better so you need a lot less and still get tons of flavor!
